Gram-positive bacteria are the main microbial contaminant in brewing. With demand for
natural alternatives to chemical disinfectants, nisin offers a solution, eliminating up to
90% of spoilage bacteria. This presentation provides an overview of its properties,
regulation, detection and brewery applications.

10:00 Synergy approach: dealcoholization plant to expand the product portfolio for
small and medium-sized enterprises

The Schulz Wizard uses the method of thin-film evaporation to produce non-alcoholic
beer. This system has multiple uses. The dealcoholization system combines
dealcoholization, flash pasteurization, blending, carbonation and degassing of water. The
aim is to achieve a synergy effect that makes the system attractive for small and
medium-sized companies as well.

Wortkoken vergt veel energie door verdamping van water en DMS. Minimale
verdamping is gewenst, maar DMS moet voldoende verwijderd worden. Toch duikt DMS
soms op in speciaalbieren en schaadt de smaak. Weten we wel genoeg over de
oorsprong van DMS?

The Poseidon system invented for dynamic fermentation in high gravity brewing with big
fermenters invents itself continuously. Next to the original purpose a few years later significant
benefits in dry hopping were found. The latest use of this retrofit item was developed with
Novonesis, supplier of NEER yeast. Non-alcoholic beers can be made with the Poseidon system
now.

The enzymatic release of polyfunctional thiols (PFTs) from hop-derived precursors enhances the flavor of dry-hopped and NABLABs beers. Our study reveals that specific Saccharomyces pastorianus strains and a maltose-negative ale yeast are highly efficient at releasing PFTs from glutathionylated precursors, offering new opportunities for innovative yeast combinations in brewing.

12.00  The importance of barley starch granule properties in malting and brewing

Brewers face several challenges due to the impact of climate change on barley growth, with rising starch gelatinisation temperatures and increased levels of small starch granules in malt as a result. This can hinder fermentable sugar production during mashing. Balancing starch behaviour and enzyme stability during mashing  is thus critical.

12.30   Selected maltose negative yeasts and their impact on non-alcoholic beers – An  overview

Non-alcoholic beers (NAB) can be produced biologically or physically, with limited fermentation and the use of maltose-negative yeasts being common methods. This work examines the use of maltose-negative yeasts for NAB production, comparing it to halted fermentation, focusing on fermentation parameters, aroma and sensory qualities.

Onze Brouwerijstudiedag zal dit jaar plaatsvinden op vrijdag 8 december 2023 en niet op de eerste vrijdag van december.

Dit omdat de internationale brouwbeurs “Brau Beviale” doorgaat van 28 – 30 november 2023. Er wordt weer hard gewerkt door het bestuur om een interessante studiedag op poten te zetten en we hopen met een iets latere datum opnieuw op een massale opkomst.

De wens om een volledige brouwerij elektrisch te verwarmen is al geruime tijd onderwerp van discussie en zelden in de praktijk gebracht voor brouwzalen die groter zijn dan 10 hL. B’Brew stelt hun gepatenteerde oplossing voor bestaande uit koude- en warmteopslagsystemen, een aangepaste brouwzaal en een geavanceerd energiebeheersysteem.
